Snack time!!! Who’s hungry? I’m betting all of us LOL!
I think it’s about time to up our snack game to something a little fancier, now that it’s warming up outside and summer is imminent (so glad to see you, sunshine!). If that sounds good to you, read on, for a fresh take on the classic crostini appetizer!
INGREDIENTS
- 1 baguette, white or wheat
- 2 plums (or other stone fruit such as peaches or nectarines)
- 3/4 cup chèvre (goat cheese)
- 1 cup loosely packed arugula
- 2 TBSP olive oil
- 2 TBSP honey
- Sea salt
Prep time: aprox. 15 minutes start to finish
METHOD
Preheat oven to 350°.
Slice baguette at an angle, into 1/2″ thick pieces.
Spread out on a baking sheet, and drizzle each slice with olive oil. Top slices with a light pinch of sea salt. Bake 5 minutes, until just slightly toasted.
While the baguette is in the oven, slice the plums into a thin wedges.
Now that the toast is done, top each slice with a few arugula leaves.
A few leaves per crostini is plenty.
Next, add a spoonful of chèvre to each toast, lightly pressing down as you go.
Next, add a plum slice to each crostini.
Almost finished! Time to add the honey for a little decadence.
Drizzle on using a spoon to give you more control.
And you’re done! Doesn’t that look delicious? A perfect afternoon snack for lounging at home.
