SPICY LEMON TURMERIC SPAGHETTI & PRAWNS (SERVE HOT OR COLD!)

Here’s a recipe with some vibrant and zingy flavours for you! If you haven’t tried Kaslo Sourdough‘s pasta yet, there has never been a better time, I promise you. This new Lemon Turmeric Spaghetti recipe has some kick, thanks to the spicy chili crisp topping you may have seen trending on social channels! Of course, if spicy isn’t for you, you’ll love the bright fresh flavours of lemon, garlic, cilantro, and more in this dish. Though, I have to admit, it would be pretty difficult not to love any pasta dish, as long as it’s made with Kaslo Sourdough noodles!

When KSP manager, Heidi, and I were chatting recipe ideas for the 2023 season, we both knew we wanted to feature more small businesses in our local B.C. community. One of our favourites is the lovely Little Creek Dressing! They recently launched their new Lemon Turmeric Salad Dressing, and after receiving one as a PR gift, I knew this was one dressing I would love to translate from salad to pasta. Thus, this new recipe was born!

Loaded with some of my favourite veggies, such as sweet bell peppers, crunchy carrots, crisp water chestnuts, tender baby corn (mostly for the fun of it!), and sugar snap peas, this dish has a secret – it tastes amazing hot or cold! You can serve this warm as an evening comfort meal, or just as easily cold, as a pasta salad at the beach. I am a big fan of seafood, so I opted to add spicy garlic chilli shrimp, but it also pairs quite nicely with grilled chicken fresh off the barbecue, or even baked or fried tofu. One thing you won’t want to skip? The garnishes!

SPICY LEMON TURMERIC SOURDOUGH SPAGHETTI & PRAWNS

INGREDIENTS

PASTA:

1/2 bag Kaslo Sourdough Spaghetti 
1/2c. Little Creek Dressing‘s Lemon Turmeric Dressing
1c. Coconut milk (canned)
1/2c. match-sticked or julienned carrots
1c. Thinly sliced bell peppers (red, orange or yellow, or an assortment)
1/2c. Sugar snap or snow peas
1/3c. Sliced water chestnuts
1/2c. Baby corn
2tbsp. grated/crushed fresh ginger
1tbsp. crushed fresh garlic
1tbsp. Sesame oil

PRAWNS:

2c. Thawed and rinsed peeled and pre-cooked jumbo prawns
1tbsp. Vegan butter
1tsp. garlic powder
1tsp. chili flakes
S&P (to taste)

GARNISH:

Lemon wedges
Lao Gan Ma Spicy Chili Crisp
Roasted peanuts or cashews
Green onion
Cilantro
Black pepper

METHOD

Begin by putting a medium-sized pot of water on to boil.

Once boiling, cook pasta according to package instructions, about 10 to 12 minutes.

Strain, and set aside in a covered pot while preparing the sauce and prawns. Do not rinse.

Mince garlic and ginger, and sauté both with the sesame oil in a skillet over medium heat. Stir gently for 2 to 3 minutes over medium-low heat, taking care to not allow to brown. Add water if needed, until ginger is softened.

Add carrots, and sauté an additional 4 to 5 minutes, then add bell peppers and peas. Reduce stirring, and allow vegetables to crisp for 3 more minutes.

Add baby corn, water chestnuts, coconut milk and dressing to the saucepan. Lower heat to minimum, cover, and simmer while preparing the prawns.

In a small mixing bowl, combine spices and prawns, and toss well to coat. In a separate preheated pan, add butter, prawns, and cook 1 to 2 minutes per side, until just heated through and beginning to curl. Remove from heat immediately, and set aside.

Add the spaghetti to the pan with the sauce and vegetables, and stir generously to thoroughly coat each delicious bite. Plate, and top with 3-5 prawns. Set the table with the garnishes, call the family to the table, and enjoy!

Definitely, don’t skip the toppings – fresh lemon wedges, green onions, and spicy chili crisp are must-haves for this dish!
