ROSEMARY GRAPEFRUIT SPRITZER

Looking for a refreshing, not to mention gorgeous cocktail to sip on the patio this summer? Look no further than this Rosemary Grapefruit Spritzer! This bubbly drink is perfect for serving afternoon company, or yourself while kicking back in the garden or on your balcony.

I’m a huge fan of using rosemary in cocktails. If you haven’t tried it yet you are going to be pleasantly surprised at how well it goes with most fruit juices! It also goes great with apple cider and caramel, but that’s a recipe for another day. I, for one, also think gin is an unsung hero of the cocktail world. I love a vodka-cran or a coconut rum as much as the next person, but gin is great for drinks with an herbal and botanical flare! Just ask the guests at my bridal shower a few years back – the gin sure was flowing that day LOL!

INGREDIENTS

Serves 1, this drink is best made by the glass and not the pitcher for the beautiful layers!

  • 1tbsp. gin
  • 1/4c. grapefruit juice
  • 1/4c. club soda
  • 2tsp. simple syrup
  • Rosemary sprigs
  • Grapefruit slices
  • 3-4 ice cubes

METHOD

Start by making roughly 1/2 a cup of simple syrup. Simple syrup is just that – simple! Mix equal parts water and table sugar, and simmer in a pot over medium heat, whisking until thickened to desired consistency. You can store leftovers in the fridge for around a month!

Drop 3-4 ice cubes into your prettiest wine glass (the ones pictured above are ‘rosé wine glasses’!), and pour over 1tbsp. simple syrup. Add 1tbsp. gin.

Add 1/4c. grapefruit juice to each glass, and garnish with a rosemary sprig.

Top with club soda, and garnish with a ruby grapefruit slice.
